Oh how sweet it is!
 
Sweet corn--even right off the stalk it's so delicious you don't even have to cook it. I am picky with my corn and when you know the day that it is ripest there is nothing better. There is a joke amongst the corn farmers that you have thirty seconds to get corn when it's at its peak with a sweet sugary taste, from the stalk to something cold because as soon as it comes off the stalk the temperature goes up. It goes from sugar to starch and gets less and less sweet the longer it's away from the cold. You are supposed to cut and freeze the corn right away so if you trip on your way to the freezer forget it it's over.

If you harvest the corn right there on the spot as the sun comes up about 7 o'clock, you pull the ear off, shuck it, pull the silks off and take a bite it's the most delicious thing, no salt, no butter, no cooking.
People look at me like I'm crazy but it is terrific it's kind of funny. Then they try it!
